Chocolate-Peanut Butter French Toast

MAKES 1 SERVING
INGREDIENTS
  • 1/3cup liquid egg whites
  • 2teaspoons unsweetened cocoa powder
  • 1/2teaspoon vanilla extract
  • Salt
  • 2slices whole-grain bread
  • 1tablespoon peanut butter (preferably natural, unsweetened)
  • 2/3cup fresh raspberries
DIRECTIONS
  1. In a shallow dish or bowl, whisk together egg whites, cocoa powder, vanilla, and a pinch of salt. Soak bread in egg mixture, one slice at a time, until all the egg is absorbed.
  2. In a large, nonstick skillet coated with cooking spray over medium heat, add bread slices (one at a time if necessary) and cook until underside is dark golden brown, about 3 minutes. Flip and cook until golden brown and slightly crispy, about 3 minutes more.
  3. Spread peanut butter on French toast. Top with raspberries.
